Bobotjie is a traditional South African favourite! This version is budget-friendly and health-conscious as it uses no animal protein. You can use any of the flavours of Chef2Table Mega Meal, although we suggest that the Beef flavour suits it best. If you are steering clear of meat altogether, then opt for the Mixed Veg flavour.
Ingredients
- 15 ml oil
- 3 onions, finely chopped
- 2 teaspoons finely chopped garlic
- 4 teaspoons curry powder
- 1 teaspoon turmeric
- 2 teaspoons salt
- 1 250g pack of Chef2Table Mega Meal
- 1 L water
- black pepper to season
- 2 tablespoons lemon juice
- 2 tablespoons fine apricot jam
- ½ cup of chutney
- 2 tablespoons brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato sauce
- 2 slices of white bread, soaked in milk
- 4 eggs
- 500 ml milk
- salt and black pepper
- 2-3 bay leaves
Instructions
First off, in a large pot or casserole dish, heat the oil and saute the onion and garlic.
Add the Chef2Table Mega Meal to the pot along with 1L water and bring to the boil.
In a mixing bowl combine the curry powder, turmeric, salt, black pepper, lemon juice, jam, chutney, sugar, tomato sauce and soaked bread. Mix until combined.
Add the sauce to the pot, and simmer for 30 minutes, mixing through regularly.
In a mixing bowl – combine the eggs, milk and seasoning. Gently pour the egg mixture over the meat and add the bay leaves.
Bake for 30 – 40 minutes at 180 degrees Celsius until the egg has set.
Serve with green beans and buttered bread.
