Ingredients:
- 2 Tbsp cooking oil
- 1 medium onion, finely chopped
- 1 carrot, diced
- 1/2 tsp dried Italian herbs
- 1 250g pack of Chef2Table MegaMeal Chicken Flavour
- 1 cup milk
- 1 cup chicken stock
- 750g chicken pieces (drums, thighs work best)
- 1 cup frozen peas
- 1 1/4 cups grated cheddar cheese
Method
- Heat the oil in a large pot over a medium heat
- Brown the chicken pieces, skin side down and then remove from pot
- Add the dried herbs, onion and carrot to the pot and cook until soft and golden (about 5 minutes)
- Add the Chef2Table MegaMeal mix to the pot along with the milk and stock.
- Season with salt and pepper
- Add the chicken back to the pot, pushing it down so it nestles in the rice
- Reduce the heat so the pot is gently simmering, cover and allow to cook until all the liquid is absorbed (about 15-20 minutes)
- Remove from the heat and stir in the peas and half the cheese.
- Sprinkle the remaining cheese on top, put the lid back on and allow to stand for 5 minutes so the cheese melts.
- Taste for seasoning and add more salt and pepper if required.
