One-Pot Stovetop Creamy Chicken


  • 2 Tbsp cooking oil
  • 1 medium onion, finely chopped
  • 1 carrot, diced
  • 1/2 tsp dried Italian herbs
  • 1 250g pack of Chef2Table MegaMeal Chicken Flavour
  • 1 cup milk
  • 1 cup chicken stock
  • 750g chicken pieces (drums, thighs work best)
  • 1 cup  frozen peas
  • 1 1/4 cups grated cheddar cheese


  1. Heat the oil in a large pot over a medium heat
  2. Brown the chicken pieces, skin side down and then remove from pot
  3. Add the dried herbs, onion and carrot to the pot and cook until soft and golden (about 5 minutes)
  4. Add the Chef2Table MegaMeal mix to the pot along with the milk and stock.
  5. Season with salt and pepper
  6. Add the chicken back to the pot, pushing it down so it nestles in the rice
  7. Reduce the heat so the pot is gently simmering, cover and allow to cook until all the liquid is absorbed (about 15-20 minutes)
  8. Remove from the heat and stir in the peas and half the cheese.
  9. Sprinkle the remaining cheese on top, put the lid back on and allow to stand for 5 minutes so the cheese melts.
  10. Taste for seasoning and add more salt and pepper if required.
